1-1lb bag frozen Cod Filets, thawed
1 box Beer Batter Mix
Oil for frying
1-1lb bag frozen Tilapia Filets, thawed
Blackened Seasoning (recipe below)
Oil for Frying
Taco Size Flour Tortillas
Bell Peppers, sliced thin
Sweet Onions, sliced thin
1 bag Coleslaw Mix
Litehouse Jalapeno Ranch dressing
Baby Spinach Leaves
Colby Jack or Pepper jack Cheese, shredded
Combine Jalapeno Ranch dressing with Coleslaw mix to desired consistency. Slice Thinly Bell Peppers and Onions. Slice or Cube avocado and toss with a small amount of Lime Juice.
For Deep Fried Fish:
Prepare batter mix according to directions. Dip fish in dry mix (unprepared), then in batter mix. Fry in Deep fryer until golden brown. Place on paper towels to drain. Keep warm.
For Blackened Fish:
Coat both sides of fish heavy with blackened seasoning mix. Heat skillet over medium-high heat with a small amount of oil. When skillet is hot: Fry Tilapia 2-3 minutes on each side. Place on a plate. Can break into pieces or shred.
Place prepared fish into tortilla, top with desired toppings. Serve with Black Beans, Mexican Rice or Mexicorn. Can make as healthy as you like or as spicy as you like!
Patty’s Blackening Spice (no sugar)
4 tbsp Kosher Salt
5 tbsp Paprika
1 tbsp Dried Thyme
1 tbsp Garlic Powder
1/2 tsp Cayenne Pepper
1/2 tsp Ground White Pepper
Mix all spices together & store in shaker containers
Great spice for Fish, Chicken or Pork.
