Patty’s Fiesta Chicken Rolls
6-Boneless, Skinless Chicken Breasts, flattened or tenderized
6 tbsp Margarine, divided
3 tbsp Processed Cheese spread
2 tsp Minced Onion
1 tsp Salt
2 tbsp Chopped green Chilies
2 cups Crushed cheddar cheese crackers (Cheez-Its)
1- 1.25z package Taco Seasoning Mix
Sliced Black Olives
Spray a Glass Loaf Pan with Cooking Spray. Pound each Chicken Breast (if not tenderized) to flatten. Mix 3 tbsp of margarine & the processed cheese spread until well blended. Mix in Minced onion, salt and green chilies. Divide Mixture equally and place on one end of chicken breast. Roll up, tucking ends in to completely enclose filling. Fasten with a few toothpicks. Melt remaining margarine in small bowl. Combine taco seasoning mix with crushed cracker crumbs and put in large bowl. Place chicken breast in melted margarine, then in cracker crumbs, pressing mixture on firmly. Place in prepared dish and repeat with remaining chicken breasts.
Cover dish with wax paper. Cook in microwave for 10 – 12 minutes on high. Rotate half way if microwave does not turn during cooking.
Prep Time: 45 minutes
Serve Chick on a bed of shredded lettuce, diced tomato and sliced black olives. Great with tortilla chips and cheese dip or salsa.
A little messy to make, but don’t have to turn on the oven and always comes out great.
