Philly Steak Sandwich Kabobs & Pineapple Coconut Bars
Philly Steak Sandwich Kabobs
1 pound boneless beef sirloin steak, cut into 1 inch cubes
1 tsp. Canadian steak seasoning
1 medium red bell pepper, cut into 1 inch chunks
1 medium onion, cut into 1 inch chunks
1 can pineapple chunks, drained
6 ounces focaccia bread, cut into 1 inch cubes
4 Thin Slices Provolone or Mozzarella Cheese
Italian salad dressing
Cut beef and vegetables the same size for even cooking.
Place in a resealable bag. Place beef and vegetables and pineapple into bag.
Add Canadian steak seasoning. Add Italian salad dressing to coat. Marinade for 30 minutes.
Alternately thread the beef, pepper, onion, pineapple and bread cubes onto four metal skewers.
Grill, covered over medium heat for 8 to 10 minutes or until meat reached desired doneness, turning occasionally.
Top skewers with thin slices of cheese. Grill 1-2 minutes longer until cheese is melted.
Serve with Coleslaw or Pasta Salad.
NOTE: Skewer Kabobs and place in a resealable bag. Pack in cooler.
Take to picnic area and grill on site. Serve with chips or slaw and Pineapple Coconut Bars.
Pineapple Coconut Bars
3 1/2 cups all-purpose flour, divided
1 cup sweetened flaked coconut
1 cup firmly packed brown sugar
1 tsp. Baking soda
1 cup real butter, divided
1 cup sugar
3 large eggs
1 (20 oz can) crushed pineapple, drained
Preheat oven to 350 degrees.
Spray a 9 x 13 pan with pan release.
In a large mixing bowl, combine 2 1/2 cup flour, coconut, brown sugar and baking soda.
Using a pastry blender, cut in 1/2 cup butter until mixture is crumbly.
Reserve 1 cup crumb mixture for topping.
Press remaining crumb mixture evenly into prepared pan. Bake for 10 minutes.
In a medium bowl, beat remaining 1/2 cup butter and sugar at medium speed with an electric mixer until creamy.
Add eggs, one at a time, beating well after each addition.
Gradually beat in remaining 1 cup of flour.
Stir in pineapple.
Spread mixture evenly over baked layer.
Sprinkle evenly with reserved crumb mixture.
Bake for 25 minutes, or until a wooden pick inserted in center comes out clean.
Let cool before cutting into squares.
