Sloppy Joe Casserole
Ingredients:
1 pound ground chuck
1/2 cup green onion, sliced (about 8 medium)
1 (15.5 oz) can sloppy joe sauce
1 (11 oz) can mexicorn, undrained
1 (6 oz) can refirgerated flakey biscuits (5 biscuits)
Directions:
Heat oven to 375 degrees.
In a 12 inch skillet, cook ground beef and onions over medium-high heat,
stirring frequently, until beef is thoroughly cooked; drain.
Stir in sloppy joe sauce and corn. Cook 2 to 3 minutes, stirring occasionally,
until heated through.
Spoon mixture into ungreased 1 to 1 1/2 quart casserole dish.
Separate dough into 5 biscuits; cut each in half. Arrange, cut side down, around
outside edge of hot mixture with sides of biscuits touching.
Bake uncovered 15 to 20 minutes or until biscuits are deep golden brown.
Serves 4.
Beefy Stoganoff Casserole
Ingredients:
2 pounds ground chuck
1 medium onion, chopped
2 cloves garlic, minced
2 TBSP. worcestershire sauce
2 cups fresh mushrooms, sliced
1 (14.5 oz) can beef broth
1 (10 3/4 oz) can cream of mushroom soup
1 (16 oz) container of sour cream or crema mexicana agria
3/4 tsp. salt
1 tsp. pepper
8 ounces of wide egg noodles, cooked and kept warm
2 TBSP. butter
1 (3 oz) can French fried onion rings
Directions:
Preheat oven to 350 degrees.
Lightly grease a 13 x 9 x 2 inch baking dish.
In a large skillet, cook ground chuck, onion and garlic over medium heat
until meat is browned and crumbles. Drain.
Return meat to skillet and stir in worcestershire, mushrooms, and beef broth.
Bring to a boil, reduce heat, and simmer for 15 minutes.
Stir in soup, sour cream or crema mexicana, salt, and pepper.
Remove from heat.
Combine hot cooked noodles and butter, stirring until butter melts.
Combine noodles and meat sauce. Spoon into prepared baking dish.
Bake for 30 minutes.
Top evenly with fried onions and bake for 10 minutes.
Serves 8.
