No-Bake Energy Bites
1 cup dry oatmeal, old fashioned
1 cup toasted coconut flakes
1/2 cup chocolate chips
1/2 cup peanut butter
1/2 cup ground flaxseed
1/3 cup honey
1 tsp vanilla
Stir all ingredients together in a medium bowl until thoroughly mixed.
Let chill in the refrigerator for half an hour.
Once chilled, roll into balls about 1″ in size.
Store in an airtight container and keep refrigerated for up to one week
Substitution can be done for about any ingredient such as: almond butter for peanut butter, wheat germ for flaxseed, different chips for the chocolate chips, etc…
Chewy Granola Goodies
1 10z bag regular marshmallows
1/4 cup margarine or butter
4 cups Special K low fat Vanilla Granola
1/2 cup dried cranberries
1-1/2 cup crisp rice cereal
1/2 cup sunflower nuts
Line a 13x9x2 inch pan with foil, Set aside.
In a large saucepan, melt the butter
Add the marshmallows stirring continuously until marshmallows are melted.
Stir in granola, dried cranberries, crisp rice cereal and sunflower nuts.
Press mixture into the prepared pan…Cool.
Remove foil lining with uncut bars from pan.
Cut into bars.
