Trail Mix Tacos
4 Mission 6 inch flour tortillas
8 TBSP. creamy peanut butter
6 tsp. honey
4 TBSP. raisins
4 TBSP. granola or granola cereal
1 banana, peeled and sliced
1 small gala apple, cored and sliced
Spread 2 tablespoons peanut butter and 1 1/2 tsp. honey in the middle of
Sprinkle 1 tablespoon of raisins and granola on the tortillas.
Place equal amounts of banana and apple sliced on the top of the tortillas.
Fold over and enjoy!
Note: The great thing is, meals made with tortillas are easy, fun and perfect for a
grab and go breakfast, lunch or after school snack!
Chicken and Pasta
6 oz pasta shells
1 1/4 pounds fresh spinach
1 pound of cooked chicken, cut into cubes
4 medium garlic cloves, chopped fine
1 tsp. olive oil or cooking spray
1 cup chicken broth
1/2 tsp. nutmeg
salt and pepper, to taste
1/2 cup parmesan cheese, grated
Cook the spinach in the broth until tender. Drain and
reserve both. Mash out excess liquid from the spinach.
Cook pasta according to package directions.
Preheat a saute’ pan or heavy skillet over medium heat,
add the oil or cooking spray.
Saute the garlic, stirring constantly, until clear.
Don’t allow garlic to brown.
Add the spinach, nutmeg, and salt and pepper.
Add the cooked chicken to the spinach, stir and add a
small amout of the reserved cooking broth. Stir the spinach
until it is hot, adding broth as necessary.
Remove pasta and immediately drain. Add the shells into
the spinach mixture and blend well.
Sprinkle with parmesan cheese and serve immediately.
