Creamy Parmesan Mashed Potatoes
served with Italian Rolled Pork Roast
2 pounds red potatoes (about 6), cut into 1/2 inch chunks
1 cup fat-free reduced sodium chicken broth
4 oz. (1/2 of 8 oz pkg.) Philadelphia cream cheese, cubed
1/2 cup Breakstone’s reduced fat or Knudesen Light sour cream
3 TBSP. Kraft grated parmesan cheese
Freshly ground black pepper
Cook potatoes in boiling broth in large covered saucepan about 15 minutes, stirring after 8 minutes. Uncover; simmer 5 to 6 minutes or until potatoes are tender and most of the broth is absorbed.
Stir in cream cheese; mash potatoes on low heat just until cream cheese is melted. Add sour cream and Parmesan; mash and stir until potatoes are smooth and mixture is heated through.
Season with freshly ground black pepper.
Baking Italian Rolled Pork Roast
Transfer Italian Rolled Pork Roast to a heavy baking dish that has been lightly sprayed with cooking spray.
Cover with foil.
Bake in a preheated 350 degree oven for 2 to 2 1/2 hours or until internal temperature reaches 170 degrees after resting.
Remove foil the last 45 minutes of baking time.
Slice into serving size pieces.
