Beef and Red Pepper Kabobs
1/4 cup balsamic vinegar
2 TBSP. olive oil
2 TBSP. water
One packet A.1. Original Marinade Mix (1.25 oz)
1 beef sirloin steak (2 lb), 3/4 inch thick, cut into 1 1/2 inch chunks
4 red bell peppers, cut into 1 1/2 inch pieces
4 cups hot cooked long-grain white rice
1 green onion, chopped
1 TBSP. chopped fresh parsley
Mix first 4 ingredients until blended; pour over meat in shallow dish.
Refrigerate 30 minutes to marinate.
Heat grill to medium heat. Thread meat and peppers alternately onto 8 skewers.
Grill 5 to 7 minutes or until meat is done and peppers are crisp-tender, turning occasionally.
Combine remaining ingredients and serve with kabobs.
Fresh Corn Salsa
4 Tomatoes, chopped (about 1 1/2 lbs)
1 cup cooked fresh corn kernels
1/4 cup red onion, finely chopped
1/4 cup fresh cilantro or parsley, chopped
1 jalapeno pepper, finely chopped
1/4 cup Kraft Zesty Italian Dressing
Mix first five ingredients. Add dressing and mix lightly.
Makes 3 cups
